When the meat is tender to the trial-fork, pour off the gravy carefully into a saucepan, thicken with browned flour; add the juice of half a lemon, a teaspoonful of kitchen bouquet and a glass of brown sherry. Pour back over the contents of the casserole, set in the oven for three minutes, covered, and serve in the dish. An elegant dish can be made of unpromising chops by following these directions. Mock casseroles of chicken Select large, smooth, tart apples of good flavor and of uniform size. Remove core with corer.
